Make this easy Vegetable Soup recipe with whatever veggies you have on hand! Nourishing and light, it’s perfect to enjoy anytime of year.


– Onion, carrot, celery, potatoes – Tomatoes, garlic, green beans - Cabbage, zucchini, corn,     broccoli – Vegetable broth – Bay leaves, oregano, cilantro - Can tomato sauce – Red pepper flakes (optional)


Cook the onions, carrots, and celery. Add broth, tomato sauce, bouillon, salt, pepper, corn, potato and green beans.


Cover and bring to a soft boil. Add the zucchini, broccoli, cabbage and cilantro, and mix.


Rest for 10 min before serving. Remove the garlic and taste for salt & pepper.

Serve with hot sauce and drizzle some fresh lime juice.
